Mock Venison

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Hang the leg of mutton in a cool place for several days until it is just about to spoil.

  2. Place it on a dish, pour ½ cup of pyroligneous acid over it, and rub it in well.

  3. Let it sit for 10 minutes.

  4. Wash the leg thoroughly, cut off the knuckle, and trim away any offensive parts.

  5. Place it in a close-shutting stewpot or thick iron saucepan with no additional liquid.
