Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the juice into a clear jelly as it cools.
China orange juice
Provides the main flavour and liquid for the jelly.
Sugar
Adds sweetness and balances the tartness of the juice.
Water
Dissolves the isinglass so it can mix evenly into the juice.

The step that matters

Skim the mixture clean without allowing it to boil. Boiling can cloud the jelly and weaken its setting power, and skimming removes foam and impurities so the finished jelly stays clear.
