What each ingredient does

Chestnuts
Starches and moisture cook into a soft, sweet, tender interior when heated.

The step that matters

Cut a small slit in the rind of each chestnut. Steam builds up inside the shell as it heats. Without a slit, the chestnut can burst in the roaster or oven, so the cut lets pressure escape.
