What each ingredient does

Large full grown peas
Form the main body of the soup and give it its green color and thick texture.
Butter
Adds richness and carries flavor when the vegetables are simmered in it.
Cucumbers
Contribute moisture and a mild, fresh flavor as they soften.
Lettuces
Soften into the soup, adding body and a delicate vegetable flavor.
Onions
Add aromatic savory depth as they cook down in the butter.

The step that matters

Press the soup through a fine sieve. Pounded peas stay grainy unless forced through a fine sieve, which breaks down the remaining skins and fibers. Skipping or rushing this leaves the soup coarse rather than smooth.

Swap the onion

How well each one fits the dish's main ingredients (peas, butter, cucumber, lettuce):

  1. Beetrootfits better
  2. Cauliflowerfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against peas, butter, cucumber, lettuce. Candidates are from the same food group and used in at least 100 recipes.
