Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and set into a firm, sliceable custard as it cooks.
Bread-crumbs
Absorb the hot milk and form the body of the pudding.
Milk
Soaks into the crumbs and provides moisture for a tender texture.
Sugar
Adds sweetness and balances the flavor of the eggs and milk.
Butter
Adds richness and fat, giving a softer, more tender crumb.

The step that matters

Stir in the whisked eggs and flavoring.. Eggs must be fully whisked and evenly mixed so the custard sets uniformly rather than in streaks. Adding them to the bread while the milk is still very hot can cause uneven setting, so cooks should let the mixture cool slightly first.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, bread, butter, egg):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Parsleyfits less well
  4. Capersfits less well

Fit is the average pairing score against milk, sugar, bread, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
