Bake Well Pudding

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Line a shallow 4-quart dish with a 1-inch layer of mixed preserves and intersperse with candied citron or orange rind.

Make the filling

  1. In a bowl, beat the yolks of 10 eggs and gradually add ½ pound of sifted sugar until well mixed.

  2. Slowly pour in ½ pound of clarified butter and add your choice of flavoring.

  3. Pour the mixture into the prepared dish until it is two-thirds full.

Bake

  1. Bake for nearly 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken and set the filling while adding richness and a custard-like texture.
Clarified butter
Adds richness and a silky texture, carrying the flavor through the filling.
Sifted sugar
Sweetens the filling and helps it blend smoothly with the yolks.
Mixed preserves
Forms a sweet, fruity layer at the base of the pudding.

The step that matters

Adding the butter slowly. Pouring the clarified butter in slowly lets it emulsify into the beaten yolks and sugar, keeping the filling smooth instead of greasy or split.
