Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard base

  1. Drop the vermicelli into the boiling milk.

  2. Simmer gently for 10 minutes, stirring occasionally until thick.

  3. Mix in the sugar, butter, and salt until well blended.

  4. Beat the mixture for a couple of minutes to cool it slightly.

Finish and bake

  1. Gradually add the whisked eggs and lemon rind.

  2. Just before baking, stir in the brandy.

  3. Pour the mixture into a baking dish.

  4. Bake at 350°F (175°C) for 30 to 45 minutes.

What each ingredient does

Eggs
Set the pudding into a custard-like texture as they cook in the oven.
Fresh vermicelli
Provides starch and body that thickens the milk into a pudding.
Milk
Forms the liquid base that the vermicelli cooks in and the custard sets from.
Butter
Adds richness and a smooth, tender mouthfeel to the pudding.
Sugar
Sweetens the pudding and helps browning on the surface.
Brandy
Adds aroma and flavour to the pudding.

The step that matters

Gradually add the whisked eggs. Adding eggs to a very hot mixture can scramble them. Beating the base to cool it slightly first, and adding the eggs gradually, helps them blend smoothly so the pudding sets evenly.

Swap the lemon

How well each one fits the dish's main ingredients (milk, sugar, butter, egg, brandy):

  1. Vanillafits better
  2. Figfits better
  3. Apricotfits better
