A Fondu

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the base

  1. Mix the potato flour with ½ cup of new milk to form a smooth batter.

  2. In a saucepan, heat ¾ pint of milk or cream until boiling, then stir it into the batter.

  3. Add the small pieces of butter and stir until melted and well combined.

Finish and bake

  1. In a bowl, whisk the egg yolks, salt, cayenne, and grated cheese into the mixture.

  2. Whisk the egg whites until firm and fold them into the mixture gently.

  3. Pour the mixture into a baking dish and bake at 350°F (175°C) for 20 minutes.

What each ingredient does

Potato flour
Thickens the milk mixture into a smooth, stable base that holds the fondue together.
Egg yolks
Enrich the base and help it set into a custard-like texture when baked.
Egg whites
Whisked to firmness and folded in, they trap air that lifts the mixture as it bakes.
Grated cheese
Adds rich savoury flavour and fat, and helps the baked mixture set.
Butter
Adds richness and smooth texture to the base.
Milk or cream
Provides the liquid that hydrates the potato flour and gives a creamy texture.

The step that matters

Folding in the egg whites. Whites must be whisked to firm peaks and folded in gently; overmixing knocks out the air that makes the fondue rise and turns it dense.
