Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. In a saucepan, gently boil the milk, salt, lemon rind, and sugar for 5 minutes.

  2. Gradually stir the boiling mixture into the well-beaten egg yolks and egg whites.

  3. Strain the mixture and add the cream.

  4. Let it cool, then flavor with brandy or ratafia.

Bake and serve

  1. Pour into small well-buttered cups and bake slowly at 300°F (150°C) for 10 to 12 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard as they set, giving it a rich, smooth body.
Egg whites
Add protein that sets during baking, giving the custard structure and lightness.
Milk
Forms the liquid base that the eggs set into a tender custard.
Cream
Adds fat for a richer, softer texture and mouthfeel.
Loaf sugar
Sweetens the custard and balances the richness of the eggs and cream.

The step that matters

Bake slowly and gently. Eggs set through gentle heat; high or prolonged heat can curdle the custard and make it grainy or watery. Baking in cups in a slow oven keeps the texture smooth.

Swap the lemon

How well each one fits the dish's main ingredients (milk, sugar, egg, cream, brandy):

  1. Vanillafits better
