What each ingredient does

Spanish chestnuts
Starchy base that softens when simmered and mashed, giving the soup its body.
Rich cream
Adds fat and richness, giving the soup a smoother, silkier mouthfeel.
Gravy stock
Liquid that cooks the chestnuts and carries their flavour into the soup.

The step that matters

Simmer until tender. Chestnuts must be fully softened before mashing and sieving; undercooked chestnuts stay grainy and give a coarse, uneven texture. Stirring often while the soup comes to the boil helps prevent scorching on the base of the pan.

Swap the chestnut
