What each ingredient does

Mackerel fillets
Form the main body of the dish, cooking gently into flaky, tender flesh.
Butter
Adds richness and a smooth, savoury finish when served hot over the fish.

The step that matters

Bringing the water to a slow boil and simmering briefly. Gentle heat keeps the delicate fillets from breaking apart and toughening, while skimming removes scum that would cloud the poaching liquid. Overcooking dries the flesh, so check with a fork early.

Swap the parsley

How well each one fits the dish's main ingredients (butter, sauce):

  1. Capersfits better
  2. Tarragonfits about as well
  3. Parsleythe original
  4. Nutmegfits about as well

Fit is the average pairing score against butter, sauce. Candidates are from the same food group and used in at least 100 recipes.
