Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and body to the sauce base.
Butter
Adds richness and a smooth, glossy mouthfeel to the sauce.
Flour
Thickens the sauce so it coats the pudding.
Brandy
Adds alcohol-based aroma and warmth to the sauce.
Rum
Adds depth of flavour and aroma to the finished sauce.

The step that matters

Do not boil after adding the spirits. Alcohol evaporates and its aroma fades when heated, and prolonged boiling drives off the volatile flavour compounds. Keeping the sauce hot but below a boil preserves the brandy and rum character.

Swap the orange

How well each one fits the dish's main ingredients (sugar, lemon, butter, flour, brandy, white wine, rum):

  1. Vanillafits better
  2. Apricotfits better
  3. Pineapplefits about as well
