To Melt Lard

Ingredients

Directions

  1. Remove the skin from the inside fat of a freshly killed pig and slice it thinly.

  2. Place the fat into a new or well-scalded jar.

  3. Set the jar in a pan of boiling water and let it simmer over a clear fire.

  4. As the fat dissolves, strain it into small stone jars or deep earthen pans.

  5. Once completely cool, cover with the skin that was removed or with thoroughly washed and dried bladders.
