To Roast Ducks

Ingredients

Directions

Prepare the ducks

  1. Remove the stumps of the feathers and the heads and necks from the ducks, leaving the feet on.

  2. Hold the ducks in boiling water for a few minutes to loosen the skin, then peel it off.

  3. Wash the insides of the ducks with water and wipe the outsides with a dry cloth.

  4. Stuff the ducks with a mixture of parboiled onions, minced sage, coarse sea salt, black pepper, and a slice of butter, if desired.

  5. Cut off the pinions at the first joint and truss the feet behind the backs.

Roast and serve

  1. Spit the ducks firmly and roast them over a brisk fire, basting constantly.

  2. When the breasts are well plumped and steam draws towards the fire, dish the ducks and serve quickly with brown gravy.

What each ingredient does

Ducks
Provide the meat and fat that form the main body of the dish.
Butter
Adds richness and moisture to the stuffing and helps the meat stay tender.
Parboiled onions
Add sweetness and aroma that perfume the bird from inside as it roasts.
Minced sage
Contributes a savoury, aromatic flavour to the stuffing.
Brown gravy
Adds moisture and savoury depth to the carved duck at serving.

The step that matters

Roast over a brisk fire with constant basting. A hot fire renders the duck's fat and crisps the skin, while basting spreads juices and fat over the surface so it browns evenly and does not dry out. Serving quickly preserves the texture of the roasted skin and meat.

Swap the onion

How well each one fits the dish's main ingredients (sage, pepper, butter):

  1. Capsicumfits better
  2. Carrotfits better
  3. Sweet potatofits better
  4. Onionthe original

Fit is the average pairing score against sage, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
