What each ingredient does

Cauliflower
Forms the main body and structure of the dish once cooked and shaped.
Butter
Adds richness and a smooth fat coating that carries flavour across the cauliflower.
Lemon juice
Adds acidity that brightens the buttery sauce and balances its richness.

The step that matters

Cook only until tender. Overcooked cauliflower absorbs water and turns soft, so the pieces lose their shape and may break when the dish is inverted.

Swap the cauliflower

How well each one fits the dish's main ingredients (butter, lemon):

  1. Shallotfits better
  2. Asparagusfits better
  3. Leekfits better
