Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides fat and richness, giving the set dessert a smooth, creamy texture.
Isinglass
Gelatin-like setting agent that firms the cream so it holds its shape when turned out.
Sugar
Adds sweetness and balances the sharpness of the lemon juice.
Lemon juice
Adds acidity and bright lemon flavour that cuts through the richness of the cream.
Lemon rind
Contributes aromatic lemon oils for fragrance without adding extra liquid.

The step that matters

Remove from heat before adding the isinglass. Isinglass is a collagen-based setting agent that can be weakened by prolonged heat, so it should be stirred in off the heat until fully dissolved. Keeping the cream just below boiling also prevents scorching and curdling of the dairy.
