What each ingredient does

Beetroot (in the method)
Is the main vegetable that is pickled and gives the dish its colour and earthy flavour.
Vinegar
Provides the acidity that preserves the beetroot and gives it its sharp, tangy taste.

The step that matters

Let the beetroot cool completely before adding the vinegar. Hot beetroot and hot vinegar can soften the slices and cause uneven pickling, and the vinegar should be cooled so the slices hold their texture while they soak.

Swap the shallot

The recipe marks shallot as optional. How well each one fits the dish's main ingredients (vinegar, pepper):

  1. Capsicumfits better
  2. Mustardfits better
  3. Cabbagefits better
  4. Shallotthe original

Fit is the average pairing score against vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
