What each ingredient does

Gooseberries
Provide the main body and tart flavour of the sauce once cooked and pulped.
Sugar
Balances the tartness of the gooseberries and adds sweetness.
Butter
Adds richness and a smooth, glossy mouthfeel to the sauce.

The step that matters

Pressing through a sieve. Gooseberries contain skins and seeds that stay behind in the sieve; pressing only the softened pulp through gives a smooth sauce, while forcing too hard can push through bitter skin fragments.

Swap the ginger

The recipe marks ginger as optional. How well each one fits the dish's main ingredients (butter, sugar, walnut):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Sagefits about as well
  4. Gingerthe original

Fit is the average pairing score against butter, sugar, walnut. Candidates are from the same food group and used in at least 100 recipes.
