What each ingredient does

Celery
Provides the main flavour and body of the sauce once softened by stewing.
Butter
Adds richness and fat, giving the sauce a smooth, rounded mouthfeel.
Flour
Thickens the sauce when mixed with butter and stirred into the liquid.
Veal broth or gravy
Supplies the savoury liquid in which the celery stews and flavours the sauce.
Thick cream or egg yolks
Enriches the sauce and adds body and a silky texture when stirred in.

The step that matters

Stirring in the cream or egg yolks. Egg yolks can curdle or scramble if the sauce is boiling hot when they are added. Keeping the sauce warm rather than boiling and stirring steadily lets the yolks thicken it smoothly.
