Another Lemon Pudding

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the lemon mixture

  1. In a saucepan, melt the butter and sugar over low heat until boiling.

  2. Remove from heat and let cool slightly.

  3. In a bowl, mix the flour with the whisked and strained eggs until smooth.

  4. Gradually add the egg mixture to the cooled butter and sugar.

  5. Stir in the grated rinds and juice of the lemons.

Bake

  1. Line a baking dish with puff pastry and pour the mixture in.

  2. Bake in a preheated oven at 300°F (150°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a smooth, tender texture to the filling.
Powdered sugar
Sweetens the filling and dissolves easily into the melted butter.
Flour
Helps thicken the filling so it sets rather than staying runny.
Eggs
Provide structure and set the filling as it bakes.
Lemons
Supply acidity and bright lemon aroma from the zest and juice.

The step that matters

Gradually add the egg mixture to the cooled butter and sugar. Adding eggs to hot butter and sugar can scramble them. Letting the butter mixture cool slightly and adding the eggs gradually keeps the filling smooth.
