What each ingredient does

Celery
Provides the main flavour and bulk of the sauce as it softens during stewing.
Veal broth or gravy
Supplies the savoury liquid that cooks the celery and forms the base of the sauce.
Butter
Adds richness and a smooth, rounded mouthfeel to the sauce.
Flour
Thickens the sauce so it clings to the celery rather than running thin.
Thick cream or egg yolks
Enriches and thickens the sauce, adding body and a silky texture.

The step that matters

Adding the cream or egg yolks. Egg yolks can curdle or scramble if the sauce is boiling when they go in. Keeping the sauce hot but off a rapid boil lets them thicken it smoothly.
