What each ingredient does

Fillet of beef
Forms the tender main cut that is roasted and carved for serving.
Butter
Basting fat that adds richness and helps the surface brown during roasting.
Brown gravy
Adds moisture and savoury depth to each serving of the roasted beef.
Currant jelly
Adds sweetness and acidity that balances the rich, savoury beef.

The step that matters

Roast in a brisk fire. A hot oven sears the outside quickly, browning the surface and sealing in juices. Roasting too slowly or for too long dries the lean fillet and turns it grey inside.

Swap the currant

How well each one fits the dish's main ingredients (beef, butter, tomato, meat):

  1. Avocadofits better
  2. Coconutfits better
  3. Cherryfits better
  4. Currantthe original

Fit is the average pairing score against beef, butter, tomato, meat. Candidates are from the same food group and used in at least 100 recipes.
