To Roast Ducks

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Clean the ducks with a dry cloth.

  3. Stuff the ducks with a mixture of parboiled onions, minced sage, salt, pepper, and butter if desired.

  4. Cut off the pinions at the first joint and truss the feet behind the backs.

Roast and serve

  1. Spit the ducks firmly and roast them at a brisk fire, basting constantly.

  2. When the breasts are plumped and steam draws towards the fire, dish the ducks and serve quickly with brown gravy.

What each ingredient does

Ducks
Provide the main meat, whose fat renders and crisps the skin during roasting.
Parboiled onions
Add moisture and mild sweetness to the stuffing as they soften and flavour the bird from within.
Minced sage
Adds a savoury, aromatic herbal flavour that pairs well with rich duck fat.
Butter
Adds fat and richness, helping the skin brown and the meat stay moist.

The step that matters

Roasting and basting at a brisk fire. Duck has a thick layer of fat under the skin that must render out while the skin crisps. Constant basting keeps the surface moist and helps it brown evenly, while a brisk heat prevents the meat from drying out before the breasts are done.
