What each ingredient does

Turkey eggs
Yolks provide the rich, creamy body that forms the mash.
Butter
Adds fat and moisture, making the pounded yolks smooth and spreadable.

The step that matters

Cooling the eggs in cold water. Changing the cold water helps the eggs cool quickly and evenly, which firms the whites and yolks so the shells peel cleanly and the yolks separate without breaking.

Swap the nutmeg

How well each one fits the dish's main ingredients (turkey, egg, butter, pepper):

  1. Parsleyfits about as well
  2. Sagefits about as well
  3. Thymefits about as well
  4. Nutmegthe original

Fit is the average pairing score against turkey, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
