An Excellent Trifle

Ingredients

Directions

Prepare the soaked cakes

  1. Soak the sponge biscuits, macaroons, and ratafias in the wine, brandy, sherry, and spirit mixture.

Layer the trifle

  1. Cover the bottom of a trifle dish with part of the soaked cakes.

  2. Pour 1 pint of rich boiled custard over the cakes.

  3. Layer the remaining soaked cakes on top of the custard.

  4. Prepare the whipped syllabub and pile it over the trifle to a depth of 2-3 inches.

Finish with cream

  1. Sweeten and flavor the thin cream with wine, then whip it to a light froth.

  2. Gently heap the whipped cream over the trifle.

What each ingredient does

Sponge biscuits
Absorb the wine and spirits, forming the soft base layer of the trifle.
Macaroons
Soak up the alcoholic mixture, softening and adding almond flavor to the layers.
Eggs
Thicken the custard through heat, giving it a rich, set body.
Cream
Adds richness and, when whipped, a light airy topping that cushions the layers.

The step that matters

Whipping the thin cream to a light froth. Cream over-whipped past soft peaks turns grainy and loses its airy lightness. Stopping at a light froth keeps the topping smooth and easy to heap gently over the trifle.
