Good Common Blanc-mange, or Blanc-manger

Ingredients

Directions

Infuse and dissolve

  1. Infuse the lemon rind and bitter almonds in the milk for 1 hour.

  2. Add sugar and isinglass to the milk mixture and boil gently, stirring often until the isinglass dissolves.

  3. Remove any scum and stir in the rich cream.

Finish and set

  1. Strain the mixture into a bowl and stir gently until nearly cold to prevent the cream from settling.

  2. Gradually mix in the brandy before molding.

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the milk mixture into a sliceable, molded dessert.
New milk
Forms the liquid base that the isinglass sets into a creamy custard.
Rich cream
Adds fat for a smoother, richer texture and a softer mouthfeel.
Sugar
Sweetens the dessert and balances the lemon and almond flavours.
Brandy
Adds alcohol aroma and flavour, stirred in once the mixture has cooled.

The step that matters

Stir gently until nearly cold before adding the cream and brandy. Cream is less dense than the warm liquid and can rise or separate if the mixture is not cooled and stirred gently. Isinglass only sets reliably as the mixture cools, so adding brandy while it is too hot can weaken the set and drive off its aroma.

Swap the lemon

How well each one fits the dish's main ingredients (milk, almond, sugar, cream, brandy):

Fit is the average pairing score against milk, almond, sugar, cream, brandy. Candidates are from the same food group and used in at least 100 recipes.
