Geneva Rolls, or Buns

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Break the butter into very small crumbs with the flour.

  2. Add the salt and mix in the yeast with the new milk and saffron water; let it rise for 1 hour.

  3. Stir in the eggs and enough hot milk to make a light dough.

  4. Let the dough rise for another 30 to 45 minutes.

Shape and bake

  1. Mould the dough into small rolls and brush with beaten egg.

  2. Bake in a preheated oven at 400°F (200°C) for 20 to 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure that holds the dough together and lets it rise.
Butter
Rubbed into the flour to add richness and a tender crumb.
Yeast
Produces gas as it ferments, making the dough rise and become airy.
Eggs
Add richness and structure, and the beaten egg brush helps the rolls brown.

Swap the saffron

The recipe marks saffron as optional. How well each one fits the dish's main ingredients (butter, flour, milk, egg, sugar, currant, lemon):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Allspicefits about as well
  4. Saffronthe original

Fit is the average pairing score against butter, flour, milk, egg, sugar, currant, lemon. Candidates are from the same food group and used in at least 100 recipes.
