To Render Boiled Fish Firm

Ingredients

Directions

  1. Add ¼ ounce of saltpetre and coarse sea salt to the water in which the fish will be boiled.

  2. Bring the water to a boil.

  3. To check if the fish is done, see if the thickest part of the flesh separates easily from the backbone.

  4. If it does, remove the fish from the pan immediately to prevent overcooking.

  5. If the fish is whole, lift it from the water when the flesh of the tail breaks from the bone and the eyes loosen from the head.
