A Good Mutton Pie
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 350°F (175°C).
Butter a dish and layer the mutton, sliced into equal thickness cutlets.
Season the mutton well with coarse sea salt and sprinkle minced eschalots between the layers.
Cover the pie with a pie crust, sealing it securely.
Bake for 1.5 hours or until cooked through.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
