Lemon Sandwiches

Oven, in the book's wordsA fierce oven

Ingredients

Directions

The book says “a fierce oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out the puff pastry very thin and cut into squares.

  2. Place one square on a baking sheet and spread jam on it, leaving a 1-inch border.

  3. Moisten the edges with beaten egg or water.

  4. Roll out a second square of pastry and place it over the jam.

  5. Seal the edges securely to prevent the jam from escaping.

  6. Brush the top with water and dust with powdered sugar.

  7. Mark the pastry into uniform divisions with the back of a knife.

  8. Bake in a preheated oven at 350°F (175°C) for 20 to 25 minutes.

  9. Cut into pieces while still hot.
