What each ingredient does

Eggs
Bind the mixture and help it set as it cooks.
Suet
Adds richness and moisture, keeping the pudding tender as it cooks.
Flour
Gives the pudding structure so it holds its shape when boiled.
Bread crumbs
Soak up liquid and lighten the texture of the pudding.
Sugar
Adds sweetness and helps give a browned, rich flavour.
Brandy
Adds aroma and flavour and helps preserve the pudding.

The step that matters

Tying the cloth. If the cloth is not tied tightly, water can seep in during boiling and make the pudding soggy and loose. A thick floured cloth also helps form a protective skin that keeps the pudding's shape.

Swap the currant

How well each one fits the dish's main ingredients (flour, bread, beef, raisin, apple, sugar, orange):

  1. Figfits better
  2. Cranberryfits better
  3. Vanillafits better
  4. Currantthe original

Fit is the average pairing score against flour, bread, beef, raisin, apple, sugar, orange. Candidates are from the same food group and used in at least 100 recipes.
