Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Line a shallow tart dish with a layer of mixed preserves.

  3. Intermingle the preserves with 2 to 3 ounces of candied citron or orange rind.

Make the filling

  1. Beat the yolks of 10 eggs and gradually add ½ lb of sifted sugar until well mixed.

  2. Slowly pour in ½ lb of clarified butter and add your chosen flavoring.

  3. Fill the dish two-thirds full with the mixture.

Bake

  1. Bake for 45 minutes to 1 hour until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Set the custard and add richness and structure as the filling bakes.
Clarified butter
Adds fat for a rich, tender texture and smooth mouthfeel.
Sifted sugar
Sweetens the filling and helps it bake to a smooth, tender set.
Mixed preserves
Provides fruity sweetness and a sticky layer beneath the custard.

The step that matters

Bake until set. Egg yolks thicken as they heat, so underbaking leaves the filling runny, while overbaking can make it grainy or cause it to weep. Check that the centre is just set.
