Lemon Sponge, or Moulded Lemon Cream

Ingredients

Directions

Make the base

  1. Infuse the cream with the lemon rind or rasp the fruit with the sugar.

  2. Dissolve the isinglass in the mixture without boiling, keeping it near simmering until dissolved.

  3. Stir in another ½ pint of cream and strain into a deep bowl.

Set and turn out

  1. Once cold, gradually add the strained lemon juice while whisking.

  2. When it thickens, whisk lightly to a sponge and pour into an oiled mold.

  3. Dip the mold in hot water to loosen, then turn out the cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and body, forming the soft, creamy structure of the dessert.
Isinglass
Gelatine-like setting agent that firms the cream as it cools, holding its shape when turned out.
Sugar
Sweetens the cream and balances the sharpness of the lemon juice.
Lemon juice
Adds acidity and bright flavour, and thickens the cream as it is whisked in.

The step that matters

Dissolve the isinglass without boiling. Isinglass must dissolve fully in warm, not boiling, liquid. Boiling weakens its setting power, so the cream may fail to firm when cold.
