Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the fruit, pectin and flavour that form the body of the jam.
Sugar
Sweetens the jam and helps it set and keep by binding water.
Lemon juice
Adds acidity that brightens flavour and supports gel setting.

The step that matters

Clearing the scum after adding the sugar. Scum rising to the surface contains impurities that cloud the jam and can spoil its flavour, so it should be skimmed off completely before boiling continues.

Swap the peach

The recipe marks peach as optional. How well each one fits the dish's main ingredients (sugar, lemon):

  1. Orangefits better
  2. Limefits better
