Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Skin, gut, and wash the eels thoroughly.

  2. Cut the eels into pieces.

  3. Season the pieces with pepper, coarse sea salt, and finely rubbed dried sage.

  4. Place the seasoned eels in a dish and nearly cover them with water.

  5. Make a pie crust and cover the dish with it.

  6. Bake for 1 hour at 350°F (175°C).
