Baked Mutton Pudding
Ingredients
Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Trim excess fat from the mutton steaks.
Season the chops with pepper and coarse sea salt.
Place the seasoned chops at the bottom of a baking dish.
Prepare the batter as instructed previously.
Add the finely shredded suet to the batter.
Pour the batter over the chops.
Bake in a slow oven at 300°F (150°C) for one and a half hours.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
