Raspberry Whips

Ingredients

Directions

  1. Rub fresh raspberries or raspberry jam through a sieve to remove the seeds.

  2. Mix the raspberry puree with cream and sugar to taste.

  3. Whisk the mixture and remove the froth as it rises.

  4. Place the froth on a sieve; if the color is not good, add a few drops of prepared cochineal.

  5. Put a little raspberry jelly or jam in jelly glasses and heap the froth on top as high as possible.
