Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the cream so it holds its shape when turned out.
Cream
Provides fat and richness, giving the set dessert a smooth, creamy texture.
Raspberry juice
Supplies the raspberry flavor and a pink base color.
Sugar
Adds sweetness and balances the tartness of the raspberry juice.

The step that matters

Add the melted isinglass to the cream mixture and whisk again.. Isinglass must be fully melted and evenly whisked in before setting; lumps or uneven distribution leave weak or patchy spots in the set dessert.

Swap the raspberry

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberryfits about as well
  3. Raspberrythe original
