Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides fat and richness, giving the set dessert a smooth, creamy texture.
Isinglass
Gelatin-like setting agent that firms the cream so it holds its shape when chilled.
Sugar
Adds sweetness and helps balance the tartness of the lemon juice.
Vanilla
Infused into the water to give the cream its aroma and flavour.

The step that matters

Adding the cooled isinglass to the cream. If the isinglass is still hot when added, it can thin the cream or fail to distribute evenly. Letting it cool first keeps the mixture uniform so it sets with a smooth, even texture.
