Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beetroots
Provide the main body, colour and earthy sweetness of the stew.
Flour
Thickens the gravy so it coats the beetroot rather than running thin.
Butter
Adds richness and a smooth finish to the thickened gravy.
Vinegar
Adds acidity that brightens the earthy flavour of the beetroot.

The step that matters

Thicken the gravy with flour and butter. Flour must be cooked into the butter and liquid so it swells and sets smoothly. Adding it raw or in lumps leaves a pasty, uneven gravy instead of a glossy sauce.

Swap the white pepper

How well each one fits the dish's main ingredients (beetroot, vinegar, flour, butter):

  1. Capersfits better
  2. Tarragonfits better
