Raised Turkey Pie with a Tongue

Ingredients

Directions

  1. Prepare the turkey by removing the bones.

  2. Pare the boiled pickled tongue and place it in the center of the turkey.

  3. Add the seasoned forcemeat and slices of sweetbreads.

  4. Sew the turkey up and place it in boiling water for 10 minutes.

  5. Make a raised paste crust large enough to hold the turkey.

  6. Once the turkey is cold, place it in the crust with bards of bacon on top and forcemeat at the bottom.

  7. Cover and decorate the pie as you would a raised chicken pie, then bake it.

  8. When serving, remove the lid and bacon, glaze the breast lightly, and add cullis or green truffle sauce.
