Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vinegar
Provides the acidity that preserves the barberries and gives the pickle its sharp flavour.
Sugar
Balances the sourness of the vinegar and adds sweetness to the pickle.
Salt
Seasons the pickle and adds to its preserving effect.
Ginger
Adds aromatic warmth to the pickle.
Cochineal
Colours the pickle red.

The step that matters

Pour the hot pickle over the barberries. The pickle must be boiled and hot when poured so it can soften the fruit and help drive out air, which supports keeping. Letting it cool fully before sealing matters for the same reason.

Swap the ginger

How well each one fits the dish's main ingredients (vinegar, sugar):

  1. Cinnamonfits better
  2. Tarragonfits about as well
  3. Peppermintfits about as well
  4. Gingerthe original

Fit is the average pairing score against vinegar, sugar. Candidates are from the same food group and used in at least 100 recipes.
