  1. Blanch and strain the oysters, preserving their liquor.

  2. Wash, drain, and remove gills from the oysters.

  3. In a stewpan, combine the oysters, fresh butter, and oyster liquor free from sediment.

  4. Add flour and water to thicken the sauce.

  5. Season with lemon juice, anchovy liquor, a little Cayenne pepper, and catchup if desired.

  6. Bring to a boil, skim the surface, and let it simmer for five minutes.
