Baked Fruit Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Rub the fruit through a fine sieve to obtain the pulp.

  2. In a bowl, combine the fruit pulp, crushed biscuits, softened butter, cream, nutmeg, sugar, and eggs. Beat the mixture for 10 minutes until well combined.

  3. Fold in the slices of citron.

Bake and serve

  1. Pour the mixture into a baking dish lined with puff pastry around the rim.

  2. Bake in a preheated oven at 350°F (175°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard and give the pudding its structure as they cook.
Fruit pulp
Provides the main flavour and moisture of the pudding.
Heavy cream
Adds richness and a soft, tender texture to the set custard.
Unsalted butter
Adds fat for richness and a smooth, tender crumb.
Naples biscuits
Crushed biscuits thicken the mixture and add body and sweetness.

The step that matters

Bake until set. Eggs set as they heat, so underbaking leaves the custard runny while overbaking can make it curdled and rubbery. Check for a set centre rather than relying only on the clock.
