The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the mixture

  1. In a bowl, beat the sifted loaf sugar with the juice of the lemons.

  2. Whisk the egg white until stiff peaks form.

  3. Fold the egg white into the sugar and lemon mixture gently.

Bake and serve

  1. Drop spoonfuls of the mixture onto a baking sheet.

  2. Bake in a preheated oven at 350°F (175°C) until set.

  3. Let cool before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Provides sweetness and bulk, and helps the mixture set into a firm, crisp puff.
Lemon juice
Adds acidity and bright lemon flavor that balances the sugar.
Egg white
Whipped into stiff peaks, it traps air and gives the puffs their light, airy structure.

The step that matters

Folding in the whipped egg white. Whipped egg white holds its air through trapped bubbles. Stirring vigorously or overmixing deflates the foam, so the puffs bake flat and dense instead of light.

Swap the lemon
