What each ingredient does

Egg yolks
Thicken the cream as they set with heat and add richness.
Egg whites
Add lightness and help the mixture hold its body while cooking.
Flour
Thickens the cream so it sets firm enough to cut into shapes.
Butter
Adds richness and a smooth, silky mouthfeel.
Sugar
Adds sweetness and balances the flavors.
Cream
Forms the rich base of the custard.

The step that matters

Let the mixture cool completely before cutting. A warm custard is too soft to hold its shape. Cooling lets the egg and flour thickening set fully, so the pieces keep their form when dipped and fried.

Swap the orange

How well each one fits the dish's main ingredients (cream, cinnamon, lemon, flour, butter, egg, sugar):

  1. Vanillafits better

Fit is the average pairing score against cream, cinnamon, lemon, flour, butter, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
