What each ingredient does

Calf's feet jelly
Provides the gelatin that thickens and sets the blancmange.
Egg yolks
Thicken the mixture as they cook and give it a rich, smooth body.

The step that matters

Cooling the custard before it sets. Egg yolks curdle if heated too quickly or too far. Stirring the pan in cold water brings the mixture down gently and keeps it smooth as it thickens.

Swap the coriander

How well each one fits the dish's main ingredients (egg, lemon, orange, white wine, sugar, cinnamon):

  1. Cardamomfits better
  2. Nutmegfits better
  3. Allspicefits better
  4. Corianderthe original

Fit is the average pairing score against egg, lemon, orange, white wine, sugar, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
