Cauliflowers

Ingredients

Directions

Prepare the cauliflower

  1. Remove all green parts from the cauliflower and cut into four parts.

  2. Soak the cauliflower in water for 1 hour.

Boil

  1. Boil the milk and water in a saucepan.

  2. Add the cauliflower to the saucepan.

  3. Skim the surface well.

  4. When the stalks are tender, carefully drain the cauliflower in a colander.

Make the butter sauce and serve

  1. In a clean saucepan, add 1 spoonful of water, a dusting of flour, butter, pepper, and salt. Mix until the butter melts.

  2. Cut half the cauliflower as for pickling and add it to the saucepan. Cook for about 10 minutes, turning occasionally.

  3. Place the stewed cauliflower in the center of a plate and arrange the boiled pieces around it. Pour the melted butter over the top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the main body of the dish, cooked until tender in the milk and water.
Butter
Melts into the sauce, adding richness and a smooth, glossy texture.
Flour
Lightly thickens the butter sauce so it clings to the cauliflower.
Milk
Gives the cooking liquid a creamy, mildly sweet flavour and softer texture.

The step that matters

Draining the cauliflower when the stalks are tender. Cooking past tenderness makes the florets fall apart and turn mushy, while drainage that is too rough breaks them. Drain gently once the stalks yield to a knife.
