Directions

  1. Cut the leg of mutton in a venison fashion and boil it in a cloth.

  2. Boil the cauliflowers in milk and water until tender.

  3. Pull the cauliflowers into sprigs and stew them with butter, pepper, salt, and a little milk.

  4. Stew the spinach in a saucepan with gravy, butter, and flour.

Assemble and serve

  1. When done, place the mutton in the center of a dish, surround it with spinach, and top with cauliflower.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides the main meat, which becomes tender through long, slow boiling.
Cauliflower
Softens into tender florets that give the topping its body and mild flavor.
Butter
Adds richness and a smooth, creamy mouthfeel to the vegetables and sauce.
Flour
Thickens the gravy so the spinach is coated in a smooth, cohesive sauce.

The step that matters

Stewing the spinach with flour. Flour thickens liquid only when it is evenly dispersed and cooked through. Mixing it well into the hot gravy before stewing prevents lumps and gives a smooth, clinging sauce.
