Directions
Wash the sweetbreads and place them in boiling water to blanch.
Transfer them to cold water and dry with a linen cloth.
In a saucepan, combine sweetbreads with salt, pepper, melted bacon, and sweet herbs.
Shake together and add gravy to moisten.
Simmer and thicken to your liking.
